Listen to me friends ... these waffles are insanely good! As they are cooking on the waffle iron, the smell of vanilla and cinnamon permeate the air leaving your entire house smelling heavenly! Add a little fruit, some butter and syrup and you've got yourself a delicious and satisfying breakfast that your whole family will love.
Tips and Tricks for the Perfect Gluten-Free Waffles:
- This recipe calls for a gluten-free all purpose flour blend that's easy to make and store for future recipes. If you cook and bake gluten-free, it's well worth the time and effort to make it for yourself.
- I've used the following, easy to find, gluten-free flour blends with great success: •Bob's Red Mill Gluten Free 1-to-1 Baking Flour
•Pamela's Products Gluten Free All Purpose Flour Blend •Pillsbury BEST Multi-Purpose Gluten-Free Flour Blend

- Cook the waffles for around 5 minutes. Once there is no longer steam coming from the waffle maker, the waffles are generally ready to remove. For a crispier crust, leave them a minute or two longer before removing.
- These waffles are good enough to eat plain, but are especially delicious topped with extras like berries, whipped cream, powdered sugar, jelly, syrup, chocolate ... the possibilities are endless!
- Gluten-Free Waffles can be frozen and reheated. Store in a freezer safe bag or container for up to 3-4 months. When ready to serve, let them thaw in the fridge and heat them in the oven on a baking sheet at 350 degrees for 10 minutes or until warm throughout, microwave for one minute or use a toaster oven.

Basic Gluten-Free Waffle Recipe

Ingredients
- 1 ¾ cups Gluten-Free All Purpose Flour Blend
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoons granulated sugar
- ⅛ teaspoon cinnamon (optional)
- 1 ½ cups buttermilk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs (beaten)
- cooking spray
- butter (fruit and/or syrup for topping (optional))
Instructions
- Whisk the ingredients together in a large mixing bowl and let the batter rest for 15 minutes.
- Heat waffle iron and coat with cooking spray.
- Pour about ¾ to 1 cup of the batter into the plate of the waffle maker and close it. Cook for approximately 5 minutes or until steam no longer escapes. Most waffle makers come with a light that let's you know when they are done. Waffle makers come in different shapes and sizes so the amount of batter will vary.
- Remove the waffle using a fork or tongs, top with your favorite fruit, butter and/or syrup and enjoy!

Have just made this for the first time and it was fab. My husband has celiac disease, I don't but as there are just two of us, I tend to eat GF as well for this kind of thing. It's at least as good as standard waffles, I genuinely wouldn't be able to tell the difference, and my husband loved them. I found the mixture made 6 waffles, though the first one was a bit too thick as I was too generous with the batter. Could probably get 7 or even 8 with practice. I have three left over so will see how they reheat tomorrow.

The is the first time we’ve ever had a recipe that actually worked, wasn’t doughy, and tasted good! I did the substitutions one comment did and it worked perfectly. We are a no wheat/gluten, no egg, so soy, and no dairy house. I used our “butter” from Earth Balance Soy-Free in place of vegetable oil, , made buttermilk from almond milk & white vinegar, omitted the eggs and added extra teaspoons of baking powder. Y’all are AWESOME, thank you!!

These are BETTER than our all purpose flour version. It's a wee bit salty to me, but with syrup or fruit, no one cares. We use Namaste Perfect Flour Blend from Costco.

One suggestion, I found when making waffles (and now especially gluten free) if you separate the eggs, beat the whites, and fold them in after everything else is mixed you get a great, fluffy texture to your waffles. A bit of extra work bit worth it!

You really nailed it with this recipe. I subbed maple syrup for the granulated sugar, and a “buttermilk” made from almond milk and apple cider vinegar and they came out great! Definitely a keeper.

Can I use gluten free coconut flour instead of all purpose flour?

When using coconut flour the ratios are much different. I have not made it with coconut flour so I can not say exactly how much to substitute with!

I altered this recipe a little bit to make it egg-free and dairy-free and they turned out light and crispy, just like a perfect waffle should be. Alterations I made:
1. Combine 1.5 cups of almond milk with 3 tablespoons of white vinegar, whisk, set aside for 5 mins to make buttermilk.
2. Add 2 tsp baking soda to original recipe
3. Leave off eggs (baking soda reacts with the vinegar to give rising effects).

Oh. I only saw your comment now but I got a pesto last Sunday and tried this recipe this morning. Omg. I absolutely love it and will definately be making it again. Can coconut or olive oil be used instead though. To get that extra crunch I experimented with time and at 7 mins I got the best results.
