Fresh Tomato Bruschetta

Ingredients

  • 1 loaf Italian or French bread sliced and toasted
  • 1 pint red cherry tomatoes
  • 1 pint yellow cherry tomatoes
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste
  • 1 handful fresh basil chopped
  • 1/2 cup balsamic vinegar

Instructions

  • Wash the tomatoes and then cut them in half or quarters.
  • In a large bowl, toss the tomatoes, olive oil, salt, pepper and half of the fresh basil.
  • Lay out the slices of toasted bread in an even layer and place a scoop of the tomato mixture onto each.
  • Sprinkle with remaining basil and balsamic vinegar reduction.

Balsamic Vinegar Reduction

  • Place the balsamic vinegar into a small saucepan and bring to a boil over medium-high heat, stirring frequently.
  • Continue to cook until it is reduced by half, about 10 minutes. Set aside to cool.
