Fresh Tomato Bruschetta
A simple but tasty appetizer that you can have ready in less than 15 minutes!
- 1 loaf Italian or French bread sliced and toasted
- 1 pint red cherry tomatoes
- 1 pint yellow cherry tomatoes
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
- 1 handful fresh basil chopped
- 1/2 cup balsamic vinegar
Wash the tomatoes and then cut them in half or quarters.
In a large bowl, toss the tomatoes, olive oil, salt, pepper and half of the fresh basil.
Lay out the slices of toasted bread in an even layer and place a scoop of the tomato mixture onto each.
Sprinkle with remaining basil and balsamic vinegar reduction.
Balsamic Vinegar Reduction
Place the balsamic vinegar into a small saucepan and bring to a boil over medium-high heat, stirring frequently.
Continue to cook until it is reduced by half, about 10 minutes. Set aside to cool.
