Roasted Multi Colored Carrots

  • 1 lb. multi colored carrots (can use regular carrots)
  • olive oil to coat
  • salt and pepper to taste
  • chives, chopped


  1. Preheat oven to 400 degrees.
  2. Toss carrots with olive oil, salt and pepper and lay in a single layer on a baking sheet.
  3. Bake for 20 minutes, stirring the carrots around half way through the cooking time.
  4. Remove, sprinkle with chives and serve hot.
