Roasted Multi Colored Carrots

Roasted Multi Colored Carrots are the perfect side dish for dinner. They only take 20 minutes in the oven.

Instructions

  1. Preheat oven to 400 degrees.
  2. Toss carrots with olive oil, salt and pepper and lay in a single layer on a baking sheet.
  3. Bake for 20 minutes, stirring the carrots around half way through the cooking time.
  4. Remove, sprinkle with chives and serve hot.
