Yum …. roasted veggies are one of my favorite things about fall baking.
Especially root vegetables like these gorgeous roasted multi colored carrots!
Roasting vegetables is such an easy way to make any dinner just a little more delicious … not to mention how nutritious they are too.
I found these multi colored carrots at Trader Joe’s. They are available at most farmer’s markets and grocery stores. If you can’t find multi colored carrots … use regular orange carrots.
They will be just as delicious!
Toss the carrots in a little bit of olive oil, salt and pepper to taste and roast them on a baking sheet for 20 minutes at 400 degrees.
Use a spatula to move them around about half way through the baking time to make sure they roast evenly on all sides.
Sprinkle with chopped chives just before serving to really bring out their flavor.
Roasted multi colored carrots make a great side dish for just about any meal. They go perfectly with lemon chicken or salmon or even a nice savory pot roast.

Roasted Multi Colored Carrots
- 1 lb. multi colored carrots, can use regular carrots
- olive oil to coat
- salt and pepper to taste
- chives, chopped
- Preheat oven to 400 degrees.
- Toss carrots with olive oil, salt and pepper and lay in a single layer on a baking sheet.
- Bake for 20 minutes, stirring the carrots around half way through the cooking time.
- Remove, sprinkle with chives and serve hot.
