Quinoa and Veggie Burrito
This burrito is super easy to make. Just take the ingredients and layer them onto the spinach tortilla, roll it up and you’ve got a healthy lunch or dinner in no time!
This flavor combination of this quinoa veggie burrito works really well. The sweetness of the sweet potatoes, the smokiness of the creamy chipotle sauce and the creaminess of the avocado all come together to create the perfect burrito!
The recipe calls for daiya cheese which is a delicious vegan substitute for regular cheese. I have found that daiya cheese is really easy to find in supermarkets.Print
These quinoa veggie burritos are a delicious way to use up left-overs!
- 4 spinach tortillas
- 1 cup sweet potatoes, mashed
- 1 cup quinoa, cooked (I used tri-color quinoa)
- 1 cup black beans
- 1/4 cup pimentos, sliced
- 1 avocado, chopped or sliced
- 1 cup fresh spinach leaves
- 1/2 cup daiya mozzarella cheese
- salt and pepper to taste
- Layer one fourth of the all ingredients onto a spinach tortilla.
- Roll the tortilla up into a burrito and serve with Creamy Chipotle Sauce.
