Chickpeas are what helps to thicken this dressing up and because their flavor is so mild they kind of hide in the background so that the orange and balsamic vinegar flavors shine. The addition of the fresh herbs give it that little bit of something something.

Here’s how to make this in less than 5 minutes!
- Take out a high speed blender, I used a Nutri Bullet.
- Put all of the ingredients in the blender.
- Blend until smooth.
- Pour over your salad.
Not only is this salad dressing oil free but it is also dairy free too. You can eat your salad dressing without all the guilt, and still go back for more!

Orange Balsamic Dressing ~ Oil Free
- 1/2 cup chickpeas
- 1/4 balsamic vinegar
- 1/4 cup raisins
- juice of 1 orange
- 1 teaspoon chopped chives
- 1 teaspoon chopped parsley
- salt and pepper to taste
- Place ingredients into a blender and process until smooth.
- Store in an air tight container in the refrigerator for up to a week.
