I’m in love with Pimento Cheese … but not just any pimento cheese. This is what I call a “grown up” version of one of everyone’s favorite spreads.
It’s cheesy …
It’s tangy …
It’s spicy …
It’s smokey …
It’s #nomnomnom (no exaggeration)
So what makes this pimento cheese so heavenly you might ask? Well to start with, this savory dip has 3 different types of cheese. Extra sharp white cheddar, extra sharp cheddar and pepper jack. The combination of these 3 cheeses gives the spread an unexpected, kind of tangy flavor that you just can’t put your finger on but … you know you just love it. You’ll seriously have to stop yourself from eating too much.
Next comes the pimentos and then … drum-roll please …
Chipotle Tabasco sauce and fresh jalapenos! This happens to be the “grown up” part of the pimento cheese spread.
Uh … yes please.
Chipotle Tabasco sauce is something that I put on almost everything. It gives food a yummy, smokey flavor that I’m in love with. As far as the jalapenos go, I’m not talking about the pickled jalapenos you get in a jar. I’m talking about fresh jalapenos you buy in the produce section and cut up yourself. They help to deepen the peppery flavor of the pimentos and just give the spread a ton of flavor.
I mean seriously, this stuff is good.
If you need something for a party or you just want something in the fridge the kids can grab after school, this spread is perfect.
Kids don’t like spicy food? No worries, just leave the jalapenos out. It might take the “grown up” aspect out but it will still be delicious!
Whether you want to slap it on a couple of pieces of bread for a sandwich or spread it over some crackers or baguettes as a dip … this stuff is the bomb!
Trust me … You need this in your life 🙂
- 8 oz. sharp cheddar cheese, shredded
- 8 oz. white sharp cheddar cheese, shredded
- 8 oz. pepper jack cheese, shredded
- 1 jalapeno, seeds removed and diced
- 1 small jar of diced pimentos
- 2 cups mayonnaise
- ½ large shallot, finely diced
- 1 T mustard
- 1 T Chipotle Tabasco sauce
- Mix ingredients together in a large bowl.
- Refrigerate for 2-3 hours before serving.
- Serve on sliced bread as a sandwich or with crackers as a dip.
